Unwrap one package of phyllo dough. Separate sheets, brushing each one with butter. Lay horizontally four sheets, one on top of another. Then lay vertically four sheets, one on top of another. You should now have 8 sheets, buttered and stacked, in an area wide enough to cover the brie round. Place the brie round in the center, and wrap the edges with the phyllo dough, until the meet at the top center. Brush the top with more melted butter.
Bake at 400 degrees for 25 minutes, or until golden brown.
While warm, scoop about 1/8 cup preserves into the top center of the brie. Drizzle whole thing with Charleston Bee Co. honey.
